Each slice is delicately sweet and crunchy in thickness, lightly scented with barley malt and with a simple, robust flavour. Rich in proteins (Manitoba flours are used) and light (the mother yeast has a type of fermentation that is friendly to digestion), this traditional biscuit is a testimony to ancient flavors that runs through family stories.
It has a patient leavening, resting and cooking time: more than two days. Baked twice, they fully deserve the qualification of bis-cotto. A complex craftsmanship that challenges those who undertake it, but which produces an extraordinary product for its simplicity. All this makes Lagaccio a pleasure that is passed down.
